Post by: DerynifanK on May 05, 2020, 08:45:36 PM
Ingredients:
51/2-6 cps flour divided              2 pkgs yeast              1 tbsp sugar
1/4 tsp baking soda                    2 tsp salt                   2 cps milk
1/2 cp water                              cornmeal

Mix dry ingredients (start with 3 cps flour)  Heat liquids until very warm (120-130 deg) Add to dry mixture and beat well. Stir in enough flour to make a stiff batter. Grease 2 loaf  pans and dust with cornmeal. Spoon batter into pans and sprinkle tops with cornmeal. Cover and let rise 45 min.  Bake at 400 degrees for 25 minutes. Remove from pans immediately.

I remember way back, my mom used an english muffin recipe to make pizza crust. It was pretty good.  I might have to give this a try.

I can't think what they might even be like - they sound like some sort of sweet bread. We have those but they usually have dried fruit and spice in them, like bun loaf, chelsea buns, tea cakes or if you are Welsh Bara Brith.

The closest thing to an English muffin that might be familiar to an actual British person would be crumpets.  They're not quite the same thing, but similar.

/me watches too much of The Great British Baking Show.

When we have our Christmas tea, my friends always bring crumpets. We toast them and put jam on them. I see crumpets as very similar to English muffins, only perhaps a little more pancake like. Our English muffins are a little more bread like, same size and we still toast them with jam, only we cut them in half before toasting so that all the little air holes in the bread can fill up with butter and jam so you can put on twice as much. LOL.
I also think that English muffins make the best buns for hamburgers. In Julian, CA, a hamburger put on an English Muffin is called a Whale Bone Burger. My mom always put a burger on an English Muffin, with lots of bacon. Bread-like Hamburger buns were strictly for fast food and not the real thing at my house. Good stuff that.
