I got this from my Aunt.
Just right for 2 servings!
Mug chocolate cake
1 Coffee Mug
4 tablespoons flour(that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
Small splash of vanilla
Add dry ingredients to mug, and mix well . Add the egg and mix
thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts. The
cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to share!)

I tried this actually and finally for the first time last night as desert with my girlfriend.
It was fantastic ... it works GREAT.
Use the optional chocolate chips as a required ingredient though ... much better with than without.

What kind of oil? The only kind I normally keep in the house is olive.
Olive oil can be used for baking. Sometimes gives a bit of a distinctive flavor, but I bet with all that chocolate, you wouldn't even notice!

I just used generic vegetable oil
Recipe was in Houston Chronicle about a month ago. Sounds good.. I think my daughter tried it..
Very yummy cake but tends to be a little dry (addition of cream cures that tho!) friend has made it with added mashed banana will let you know how that goes.
