Just wondering whether Stefan Coram was pronounced more like Stephanie or like Steve.

It's in the Steff-an groups definitely not Steeve

I was also thinking that this would have been a very popular topic for @Unicorn636 since he was her favorite character.

I'm pretty sure I remember hearing KK pronounce it as "Steff-an" (stressed on the first syllable) during one of her readings at Dragon*con, but we can ask her at our next Zoom chat.
